Lauki ka Halwa | Lauki ki Lauj | Dudhi Halwa | Traditional Indian sweet | Garnish and Savour

Did you know Lauki/ Bottle gourd is one of the few vegetables which can be used to make sweet dishes. Lauki ka Halwa is one such dish. Cooked in milk with nuts, then caramelised using sugar and garnished with coconut, this is ethereal, melt in your mouth experiance, It is also great as a Upwas/ Fasting dessert.

Ingredients
  • Milk- 750 ml
  • Bottle gourd/ Lauki- 500 gms
  • Ghee/ Clarified butter- 0.5 tbsp for toasting dry fruits
  • Ghee/ Clarified butter- 2 tbsp to be added to Halwa
  • Almonds- 3-4
  • Raisins- 15-20
  • Charoli/ Chironji- 1 tsp
  • Fresh Cream- 100 ml
  • Sugar- 8-10 tbsp
  • Fresh ground Cardamom- 1/4th tsp
  • Grated coconut- For garnish
Directions
  • Step 1 Heat milk in a Kadhai/ Pan.
  • Step 2 Peel, deseed and grate the bottle gourd/ lauki.
  • Step 3 Heat some ghee/ clarified butter in a pan and toast some chopped almonds, raisins and charoli/ chironji and keep aside.
  • Step 4 Once the milk boils add the grated bottle gourd/ lauki and cook until the milk completely evaporates. Keep staring occasionally to avoid scorching at the bottom.
  • Step 5 Once the milk completely evaporates, add the fresh cream. Keep staring.
  • Step 6 When the fresh cream has reduced substantially add the toasted nuts.
  • Step 7 Keep cooking while stiring.
  • Step 8 After the cream has completely evaporated, add 2 tbsp ghee/ clarified butter and keep cooking until a light golden colour is achieved.
  • Step 9 Add the sugar once the golden colour is achieved.
  • Step 10 Soon the sugar will melt and the fats ( ghee/ clarified butter ) will separate.
  • Step 11 Now add fresh ground cardamom and switch off the flame. The halwa is now ready.
  • Step 12 Use grated coconut to garnish and savour.

LAUKI KA HALWA PHOTO RECIPE:

1. Heat milk in a Kadhai/ Pan.

2. Peel, deseed and grate the bottle gourd/ lauki.

3. Heat some ghee/ clarified butter in a pan and toast some chopped almonds, raisins and charoli/ chironji and keep aside.

4. Once the milk boils add the grated bottle gourd/ lauki and cook until the milk completely evaporates. Keep staring occasionally to avoid scorching at the bottom.

5. Once the milk completely evaporates, add the fresh cream. Keep staring.

6. When the fresh cream has reduced substantially add the toasted nuts.

7. Keep cooking while stiring.

8. After the cream has completely evaporated, add 2 tbsp ghee/ clarified butter and keep cooking until a light golden colour is achieved.

9. Add the sugar once the golden colour is achieved.

10. Soon the sugar will melt and the fats ( ghee/ clarified butter ) will separate.

11. Now add fresh ground cardamom and switch off the flame. The halwa is now ready.

12. Use grated coconut to garnish and savour.
