Lauki Ki Kheer/ Doodhi Kheer/ Bottle Gourd Kheer

Lauki ki Kheer is another great way of making a sweet dish with Lauki/ bottle gourd. This one is a light, sweet blend of Lauki cooked in milk along with toasted nuts! Makes a perfect Upwas/ fasting dessert. Here is how to make it!

Ingredients
  • Milk- 400ml
  • Lauki/ Bottle gourd- Approx.- 350 gms
  • Ghee/ Clarified butter- 0.5 tsp for toasting dry fruits
  • Ghee/ Clarified butter- 1 tsp for sautéing Bottle Gourd/ Lauki
  • Almonds- 3-4
  • Raisins- 15-20
  • Charoli/ Chironji- 1 tsp
  • Sugar- 1 tbsp
  • Grated coconut and fresh ground cardamom/ elaichi- For garnish
Directions
  • Step 1 Heat milk on low flame in a vessel.
  • Step 2 Meanwhile peel the bottle gourd/ lauki, deseed it and grate it.
  • Step 3 Using your hands squeeze the grated bottle gourd/ lauki to remove the excess moisture.
  • Step 4 Heat some ghee/ clarified butter in a pan and toast some chopped almonds, raisins and charoli/ chironji and keep aside.
  • Step 5 Using the same pan heat some ghee/ clarified butter and sauté the grated bottle gourd/ lauki. This will ensure that the bottle gourd/ lauki gets cooked and there is further reduction in its moisture. (Step 4 and 5 ensure that you achieve the traditional, authentic taste of the dish.)
  • Step 6 By now the milk must be hot. Add the sugar, roasted dry fruits and the sautéed bottle gourd/ lauki and bring it to a boil.
  • Step 7 Cover for 2 mins.
  • Step 8 Garnish with fresh ground cardamom/elaichi and grated coconut.
