Noodles in fresh cream and cheese with mushrooms and spinach .This unique preparation feels mouth-wateringly rich and creamy while the toasted peanut and sesame seed garnish gives a surprising crunch once in a while.

Ingredients
  • Noodles- 100 gms
  • Garlic- 3-4 cloves
  • Onion- 1 Large
  • Mushrooms- 8-10
  • Peanut and Sesame seeds- as desire for garnish
  • Oil- 3 tbsp
  • Salt- to taste
  • Pepper- 1/4th tsp
Directions
  • Step 1 Peel the garlic and onions, then finely chop them on a board.
  • Step 2 Slice 5-6 mushrooms to a thickness that you desire.
  • Step 3 Cut 2 mushrooms into rings.
  • Step 4 Finely chop 1 mushroom.
  • Step 5 Dry roast/ toast some peanuts, then roughly chop them, keep aside.
  • Step 6 Dry roast/ toast some sesame seeds and keep aside.
  • Step 7 Shallow fry mushroom rings and then keep aside.
  • Step 8 Heat 1 tsp oil in a pan and sauté the finely chopped onions, garlic and mushrooms.
  • Step 9 Once onion turned light golden add the sliced mushrooms.
  • Step 10 Add salt and pepper.
  • Step 11 1-2 min. later add roughly chopped spinach and cover for 2-3 mins.
  • Step 12 Now, add some grated cheese and 3 tbsp fresh cream.
  • Step 13 Once cheese melts add some boiled noodles.
  • Step 14 Add an egg yolk and fold it in for a silky smooth texture. The heat from the noodles will cook the egg yolk, therefore do not overcook the egg. Using egg yolk is optional.
  • Step 15 Now serve in a plate and garnish with toasted peanuts, sesame seeds and the mushroom rings.

MUSHROOM NOODLES PHOTO RECIPE:

3. Cut 2 mushrooms into rings.

4. Finely chop 1 mushroom.

5. Dry roast/ toast some peanuts, then roughly chop them, keep aside.

6. Dry roast/ toast some sesame seeds and keep aside.

7. Shallow fry mushroom rings and then keep aside.

8. Heat 1 tsp oil in a pan and sauté the finely chopped onions, garlic and mushrooms.

9. Once onion turned light golden add the sliced mushrooms.

10. Add salt and pepper.

11. 1-2 min. later add roughly chopped spinach and cover for 2-3 mins.

12. Now, add some grated cheese and 3 tbsp fresh cream.

13. Once cheese melts add some boiled noodles.
